Tuna Patties using CarbQuik

1 6 oz. can tuna
1 egg
pinch onion flakes
salt and pepper to taste
2 tbsp. Carbquik
oil to fry in

Mix the tuna, egg, onion flakes, salt, pepper, and Carbquik together. Heat oil in pan (I used coconut oil), and spoon tuna mixture into 4 large pancake like patties. Brown on each side. Add a vegetable and you have a quick delicious and filling meal!



Carbquik Pancakes

2 eggs
1 cup Carb Countdown 2%
2 1/3 cups Carbquik
2 tablespoons Splenda
1/4 cup vegetable oil

Beat eggs with electric beater until thick and creamy.
Blend in milk; add Carbquik and Splenda. Mix just until thoroughly dampened. Fold in oil.
Spoon onto medium-hot ungreased griddle. When puffed up, and bubbles begin to break, flip over and bake on other side.

Makes about 15-20 small pancakes. 4 NET carbs each



Carbquik Brownies and Chocolate Frosting

Servings: 16 Net Carbs Per Serving: 2g Total Preparation Time: 20 minutes

3/4 stick butter
4 ounces unsweetened baking chocolate
2 cups Splenda
2 teaspoons vanilla
4 whole eggs
1 egg yolk
3/4 cup Carbquik
3/4 cup walnut, chopped

Chocolate Frosting:

2 tablespoons butter
2 ounces unsweetened baking chocolate, cut into pieces
2 cups powdered Splenda (To make powdered Splenda, add the Splenda to a food processor and pulse till very fine. This can also be done in a coffee grinder in smaller batches)
2 to 3 tablespoons hot water

-Heat oven to 350ºF. Grease bottom and sides of square pan, 9x9x2 inches. -Melt butter and chocolate in 1-quart saucepan over low heat, stirring constantly.
-Cool slightly and add Splenda to chocolate and blend well till smooth.
-Beat vanilla and eggs in medium bowl with electric mixer on high speed 5 minutes. Beat in chocolate mixture on low speed.
-Beat in Carbquik just until blended. Stir in walnuts. Spread in pan.
-Bake 15 to 20 minutes or just until brownies spring back in the middle and begin to pull away from sides of pan. -Cool completely in pan on wire rack. Spread with Chocolate Frosting. Cut into 4 rows by 4 rows

Chocolate Frosting
-Melt butter and chocolate over medium heat till smooth.
-Stir in Splenda and stir till smooth, add hot water as needed to form a smooth frosting.



Garlic Poppyseed Rolls

3 large eggs separated
2 tablespoons butter
1/2 teaspoon cream of tartar
1/3 cup heavy cream
2 teaspoons Splenda
1/4 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoons bottled fresh minced garlic,or 3 cloves fresh garlic, minced
1 1/2 teaspoons poppy seeds
1/2 cup pork rinds (plain or flavored) crushed fine

Place egg whites in large mixing bowl, add cream of tartar and set aside. Melt butter in a medium microwave safe bowl for 15-20 seconds on high. Add remaining ingredients to melted butter (except pork rinds and egg whites) and beat till combined. Set aside.
Whip egg whites and cream of tartar till stiff but not dry. GENTLY fold in yolk mixture along with pork rinds. Do Not Over mix.
Spoon evenly into buttered non-stick muffin or popover pans. Muffin cups will be full.
Bake @ 350 degrees for about 25 minutes or till browned. Cool in pans on a rack.
Makes 6 rolls @ 2 grams of carbs each roll.

Carbquik White Pizza

Servings: 8 Net Carbs Per Serving: 2g Total Preparation Time: 15-20 minutes

1 1/2 cups Carbquik
1/3 cup hot water
8 ounces ricotta cheese, whole milk
4 ounces sliced pepperoni
1/2 cup sliced mushroom
6 ounces shredded mozzarella cheese

-Heat oven to 450ºF. Grease 12-inch pizza pan. Stir together Carbquik mix and very hot water; beat until soft dough forms. Knead dough 2-3 minutes till dough is dry and no longer sticky.
-Press dough in pizza pan. Spread ricotta cheese over dough. Top with remaining ingredients.
-Bake on the lowest rack in hot oven 12 to 15 minutes or until crust is golden brown and cheese is bubbly.

Low-Carb Topping Ideas: meats, peppers, olives, asparagus, smoked fish.

Note: If using traditional pizza sauce, par bake crust 7 minutes in a 400ºF oven before adding sauce and toppings. Otherwise, the sauce may soak into the dough causing the pizza to come out soggy.



Carbquik Pound Cake

Servings: 16Net Carbs Per Serving: 1gTotal Preparation Time: 60 minutes

3 1/2 cups Carbquik
1 1/2 cups Splenda
3/4 cup butter, softened
1 teaspoon vanilla
1/8 teaspoon salt
6 whole eggs
8 ounces cream cheese, softened

-Heat oven to 350°F.
-Grease angel food cake pan (tube pan, 10x4 inches or 12-cup bundt cake pan) and dust with Carbquik.
-Beat all ingredients in large bowl on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into pan.
-Bake 55 to 60 minutes or until toothpick inserted near center comes out clean.
-Cool 5 minutes; turn pan upside down onto wire rack or heatproof serving plate.
-Remove pan; cool cake completely



Carbquik Cheddar Cheese Biscuits

Just Like Red Lobster's™ Biscuits!

Servings: 10 Net Carbs Per Serving: 2 Total Preparation Time: 10-12 minutes

2 cups Carbquik
2 ounces butter, cold
1/2 cup shredded cheddar cheese
1 pinch garlic powder
1 pinch salt
1/4 cup heavy cream
1/4 cup water

-Preheat oven to 450 degrees

-Cut the cold butter into the Carbquik with either a pasty cutter or two knives, till the mixture resembles coarse meal.

-Add the shredded cheese, a pinch of salt, and garlic powder and blend well.

-Mix the heavy cream with water to equal 1/2 cup of liquid, pour into dry mix.

-Mix till dough forms and comes together, but do not overwork the dough.

-Drop the dough onto a lightly greased cookie sheet approx 1 ounce size portions.

-Bake in hot oven 8-10 minutes till biscuits are golden brown.
