chicken wings

Cut off the wing tips and separate the drumette.

arrange the wings on a cookie sheet (a girl i know puts them on a cooling rack and then on a baking sheet with foil on it)

Sprinkle fairly generously with salt, pepper, paprika, garlic powder and a bit of cayenne pepper.

Roast in a 375 degree oven for about 1 and a half hours, turning over once and re-spicing about half way through. You have to judge the time a little, depending on how "well done" you like them. This amount of time gives a pretty well done wing with crispy skin.

My hubby loves them!



Peanut Butter Shake (w/mix)

1/4 cup heavy cream
1/4 cup crushed ice or a few cubes
1/2 cup water
2 rounded scoops vanilla shake mix (can use choc)
1 tablespoon sugar free peanut butter


Put cream, ice and water in blender. Add shake mix and blend until smooth. Add the peanut butter and briefly blend again. The peanut butter makes it creamy and thick!



milk (using liquid non-dairy creamer)

1/4 cup liquid non-dairy creamer
3/4 cup water
3 splenda packets (or to taste)


Mix ingredients together



Creamy Chocolatey Shake (w/mix)

2 scoops atkins chocolate shake mix
1 tablespoon unsweetened Hersheys cocoa
2 packets artificial sweetner
1 Handful Ice
8 Oz Water


Combine all ingredients in a mixer. Add sweetner to taste. And enjoy this smooth Creamy chocolatey shake. Very close to McDonalds chocolate shake without the sugar or carbs.



Cold Coffee Shake (w/mix)

1/4 cup protein powder -- vanilla
1 teaspoon instant coffee
1 tbsp. Cocoa
3 packets splenda
1 cup ice
8 ounces water. -- (8 to 10)

Put Ice and water in Blender and blend for 1 minute, add protein and coffee
and chocolate and blend for 15 seconds.

Serve with more Ice if desired. Makes a wonderful cold coffee drink with
very low carbs and very high protein



Hot Cocoa To Die For

1 cup water
1/3 cup heavy cream
1 1/2 tablespoons unsweetened cocoa
2 packages artificial sweetener
1 tablespoon heavy cream -- whipped

heat water, cocoa and sweetner to almost boil over med/high heat
reduce to med/low to stur in heavy cream
continue to stur over med/low heat until desired temp
pour into cup then add whipped cream to top

"Snicker Bar" Coffee

Add to freshly brewed coffee
1 shot of Da Vinci sugar free Chocolate syrup
1 shot of Da Vinci Sugar free carmel syrup
1 shot of Da Vinci Sugar free hazelnut syrup
a pack splenda
Dash of heavy cream



"McDonald's" (Low Carb) Shamrock Shake

1/2 cup light cream
1/2 cup water
1/2 teaspoon peppermint extract
1 tablespoon DaVinci's Vanilla syrup (0 carbs)
3 drops green food coloring


Put into blender with a couple ice cubes.

heavy cream will make it greasy tasting..



Orange Creamsicle Pudding Dessert

1 pkg unsweetened orange Kool-Aid
2 pkgs Knox unflavored gelatin
approx. 1/3 cup splenda or to taste
1-1/2 c. boiling water
8 ounces cream cheese.

Mix the dry ingredients together. Slowly add hot water, pouring and stirring at the same time. Whisk the cream cheese in. Pour into dish, refrigerate. sets in about 3 hours. Cut into squares.



Canned Chicken recipes

Chicken Dip

1 -10oz. can drained White Chicken Meat (i like using the white meat better makes it firmer)
1 -8oz. block of Cream Cheese
1/2 cup of sour cream
1 tsp. of chicken bouillon powder (cubes do not work well with this)
Cheddar Cheese (for topping - as much as you like)

Mix all ingredients and heat in 350* oven until cheese melts and dip is warmed through about 20 minutes

Chicken Salad

1 -10oz. can drained White Chicken Meat (i like using the white meat better makes it firmer)
3 TBS Dukes Mayo (no sugar added)
1-2 TBS pickle relish (no sugar added)
1 TBS slivered almonds
green seedless grapes (if your plan allows them)

Dump chicken into a bowl and squish it up with a fork to remove chunks. add mayo, relish and almonds. slice up a few (or a few more!) green grapes. Mix it all up and enjoy! Also good with cheddar cheese on a low carb wrap!



sort-of-but-not-quite-bbq chuck roast

2-3 lb chuck roast (about 2 in thick)
3 TBS olive oil
1 garlic clove (or equivilent in powder form which is what I used)
1 tsp onion powder
1 10oz can red enchilada sauce
few splashes of balsamic vinegar
sprinkle of splenda (use less sweetener than vinegar)

preheat oven to 375.

heat oil in deep skillet over med high heat and sear both sides of the roast. mix together enchilada sauce, onion powder and garlic in a bowl. When roast is brown on both sides, turn skillet to low heat and add sauce mixture, cooking for a few minutes. put roast in a pan for the oven and cover with sauce from skillet, add vinegar and splenda.

cook in oven for 1 1/2-2 hours or until roast is cooked through. sauce will thicken as it cooks down. extra sauce can be saved for another dish or served on the side for 'dipping'.

I wasnt sure what to call this.. DH thinks it tastes sort of like BBQ, but likes it very much (and he is a picky eater). I actually made this as a variation on a low carb ginger roast or mexican chicken because i was missing ingredients for both dishes.

play around a bit with it to suit your tastes.



DEEP DISH PIZZA QUICHE

4 oz softened cream cheese
4 eggs
1/3 cup heavy cream
1/4 cup parmesan cheese (grated)
1 tbs chives
1/2 tsp Italian or pizza seasoning
2 cups shredded cheese
1/2 tsp wet garlic or 1/4 tsp garlic powder
1/2 cup lowest carb tomato or pizza sauce
1 cup mozzarella cheese
Toppings to taste

Preheat oven to 375.

Beat together cream cheese and eggs till smooth. Add cream, parmesean cheese and spices.
Spray 13x9 glass baking dish nonstick spray. Put 2 cups of shredded cheese in dish and pour egg mixture over.

Bake at 375 for 30-35 minutes. Remove from oven. Spread with sauce and then add your toppings. Cover with mozzarella cheese. Bake until browning and bubbly

Let stand for 5 minutes or so.



BACON CHEESEBURGER CASSEROLE

1 pound ground beef
1 egg
4 ounces shredded cheddar cheese
4 ounces shredded mozzarella cheese
3 to 5 slices of bacon (cooked and crumbled)
garlic powder to taste
black pepper to taste
chili powder to taste

Preheat oven to 350 degrees.
Lightly brown beef and drain well.
Mix all ingredients together except Mozzarella.
Press mixture into small casserole dish and top with Mozzarella.
Bake in the oven for 25 to 30 minutes.
Cheese should be melted and lightly browned.



chicken fried (cube)steak and mushroom gravy

cube steak (tenderized)
eggs
parmesan cheese (powder)
seasonings of your choice (not much salt is needed)
1 cup chicken broth
1 cup heavy cream
6-8 ounces sliced mushrooms
3 cloves of garlic
1 T olive oil
oil for frying

heat oil in nonstick skillet to medium heat. sift the seasonings and parmesan together (or just break up big chunks and mix seasonings in). beat an egg or two for dipping. dip each piece of steak first into the egg, then in the parmesan cheese batter. place in skillet, fry each side about 5-6 minutes.

for the gravy:
heat 1 T olive oil, saute mushrooms in oil about 7-8 minutes or til nice and brown, mince 3 cloves of garlic and saute them in witht he mushrooms for another 2 minutes, add 1 cup chicken broth and bring to a boil, reduce heat and simmer til nearly dry. add cream and simmer about 5-6 minutes more then remove from heat. sauce will thicken slightly as it cools.



Creamed Pork

Sauce
1 small (250 mL) tub of sour cream
1 tsp of mustard
1/3 cup of dill pickle juice
2-3 regular size dills diced small
salt & pepper

Mix the above ingredients together ahead of time, and store in the fridge. (Should sit at least 1/2 - 1 hour, longer if you have the chance)

Meat
6 boneless pork loin chops (butterfly) or other thin cuts of pork.
1 cup of broth
butter

Brown the meat in the butter in a frying pan
Add the 1 cup of broth and allow it to cook down so almost all the liquid is gone
Mix in the cream sauce, and stir together until heated through and sauce cooks down and thickens



Easy Hardboiled Eggs

Cover eggs with water and bring water to a boil with lid on. When it starts to boil, move pan off heat and let sit for 20 minutes.

Drain water and replace with cold water. Let sit 15 minutes.

Eggs will be thoroughly cooked and very easy to peel



CrockPot:: Pizza Chicken

8 boneless, skinless chicken breasts
pizza seasonings (oregano, peppers, parsley. minced onion etc or you can buy already made pizza seasoning)
small jar pizza sauce
1/4c parmesan cheese
1 c. shredded pizza cheese


Cover chicken with seasonings. Place in a 3 - 4 quart crockpot/slow cooker.

Pour the pizza sauce over all. Top with more seasonings if desired then add parmesan cheese. Cover and cook on low for 4 - 5 hours, until chicken is thoroughly cooked.

Stir well.

Sprinkle with pizza cheese and let stand 5 minutes to melt cheese.

Makes 8 servings.



CrockPot:: Canned Ham

place a canned Ham in crockpot and add enough Diet Coke to cover and cook all day on low.

Great taste!!!



CrockPot:: Rotisserie "Deli" Chicken

1 whole chicken
tin foil
spray cooking oil
seasoning


Spray the bottom of crockpot with olive oil non-stick cooking spray. Next, take pieces of foil and ball them up, placing them in the bottom of the crockpot. The chicken is going to "sit" on the foil balls. Cover the bottom of the crockpot with tinfoil balls. Spray the chicken with the olive oil spray and season with seasoned salt (or rotisserie seasoning, lemon pepper etc).

cook in crockpot on high for 4 hours.

** tin foil and the time/temp are "non-negotiables"



CrockPot:: Corned Beef and Cabbage

1 Corned Beef brisket
1 1/2 cups water
Seasoning Packet (or 2 bay leaves, 1 Tbl peppercorns, salt as desired)
1/2 head green cabbage, cut in serving size wedges

Put 1st 3 ingredients in the crockpot, cook on low for about 6 hours. Add cabbage wedges and cook for 2 more hours.



Stuffed Olives

1 jar of large green olives
gorgonzola cheese (or blue cheese)

Drain olives well, blot with paper towel

Stuff the olives with larger pieces of gorgonzola cheese (best to use whole pieces and let them come to room temp first.



Stuffed Mushrooms

Fresh Mushrooms cleaned and stems removed
80z (room temperature) cream cheese
bacon bits

Mix cream cheese and bacon bits together. Stuff each mushroom with a dollup of mixture and pop in the microwave for a few seconds.. yum!



Pepperoni Pizza Dip

1 8-oz. pkg cream cheese, softened
1/2 cup sour cream
1 t. dried oregano, crushed
1/8 t. crushed red pepper, optional
1/2 cup pizza sauce
1/2 cup chopped pepperoni
1/4 cup sliced green onion
1/4 cup chopped green onion
1/2 cup shredded mozzarella cheese (2 oz.)

Mix together cream cheese, sour cream, oregano, garlic powder, and red pepper. Spread evenly in a 9inch pie plate. Spread pizza sauce over the top. Sprinkle with pepperoni, green onion, and green pepper. Bake in a 350° oven for 10 minutes. Top with cheese; bake 5 minutes more or till cheese is melted and mixture is heated through. Serve with favorite 'dipping' veggies!

Makes 1 1/2 cups, 12 servings

Like Velveeta Rotel Main Dish

1 1/2 lbs hamburger
1 small can Rotel Tomatoes
1 10 oz bag Angel Hair cole slaw mix (cabbage)
8 oz American Cheese (Kraft Deluxe American cheese - unwrapped slices)

Brown hamburger and drain. Add tomatoes and cabbage (I add the rotel tomatoes at the same time I add the cabbage and simmer it for about 15 minutes which cooks out most of the liquid. Also, I use the small can of Rotel). Simmer until cabbage is tender, about 15 minutes. Add cheese and mix well after cheese melts.

BCB Salad

(Broccoli Cheese Bacon Salad)

2 broccoli crowns chopped up
1 box precooked bacon chopped up
1/4 red onion chopped up
8oz cheddar cheese
1 small jar mayo
red wine vinegar
splenda to taste

Just mix together.. chill if you like.

Great addition to a picnic.. would also taste great with cauliflower substituted for one of the broccoli crowns.
