Ricotta Mousse

1/2 cup ricotta
1 tablespoon heavy cream
1 tablespoon unsweetened cocoa powder
2 packets Splenda

Mix it all together. Watch out for the carbs = 7-8 g



Spinach-Cheese Bake

4 eggs
3/4 teaspoon salt
1/2 teaspoon pepper
2 packages (10 ounces each) frozen chopped spinach, thawed, squeezed dry
1 container (8 ounces) whole milk cottage cheese
1 1/2 cups (6 ounces) packed shredded sharp cheddar cheese
4 green onions, chopped
3 tablespoons CarbQuik (or other bake mix)
2 tablespoons chopped fresh parsley

1. Heat oven to 350°F. Butter an 8" square baking dish. Set aside. In a large bowl, beat eggs with salt and pepper. Add spinach, cottage cheese, cheddar, green onions, bake mix and parsley; mix well.

2. Pour egg mixture into prepared dish. Bake 45 minutes, until center is set and top is golden brown. Let bake sit a few minutes before cutting into squares



(Crustless) Ricotta Quiche

Preheat oven to 325

1 pound Ricotta
4 eggs
6 TBS Splenda
1/2 cup heavy cream
1/2 cup water
1/2 Tsp vanilla

Beat all ingredients till smooth. Pour it into a buttered 9" pie plate, Bake for 1 hour. Remove from oven and let cool. Refrigerate till chilled



Ricotta Quiche

3 eggs beaten
1.5 cups ricotta
parsley
basil
2 cups broccoli
2 oz sharp cheese grated
2 tbsp parmesan cheese grated
sauteed scallion
salt and pepper

mix all and bake in buttered tart pan at 350 for 35 mins.

6 servings, 6 grams per svg



Chicken Tenders

4 large boneless chicken breasts cut in 1/2
1/4 C heavy cream
1/4 C water
2 cups plain pork rinds
1/4 C grated pepperjack cheese
1 tsp chicken seasoning
1/8 c olive oil

heat olive oil in a large skillet.

mix the cream and the water in a small bowl... in a blender, grind pork rinds and add cheese and seasoning ~ pulse a few times. pour into a baggie

dip each piece of chicken in the wet mix and then shake in the dry mix.

add each piece slowly to the hot oil, turning each piece every once in a while to get a good color on both sides.. continue to cook all the way through.



flaxmeal breakfast with TVP

2-3 T ground flax seed
2 T TVP (Textured Vegetable Protein)
1/2 cup water
2-3 T French Vanilla Davinci Syrup
1 T butter
1 T cream
Few shakes of cinnamon

Heat water and Davinci syrup in micro for about one minute. Mix all other ingredients in bowl. Pour hot water over cereal and let it sit for a minute or two, stir and enjoy!



Cream cheese pancakes

1 8 oz package cream cheese
4 eggs, separated
1 1/2 tsp Splenda
1/2 tsp cinnamon
butter for pan, griddle

Syrup
2 teaspoons Splenda
1/2 stick butter, unsalted
1/2 tsp cinnamon

In a medium bowl, mix together cream cheese, egg yolks, Somersweet (splenda) and cinnamon until well blended.

In another bowl, beat egg whites with an electric mixer until stiff peaks form. Fold egg whites into cream cheese mixture.

Heat griddle to medium heat. Dollop about 1/3 cup of the batter onto the buttered griddle.

Cook until golden brown, about 2-3 minutes. Flip and cook other side to a golden brown, adding butter to griddle as needed.

To make Syrup...
Mix sugar substitute with melted butter until dissolved. Stir in cinnamon or maple extract and pour over pancakes.



Meatloaf Buddies

you get 1 and 1/3 TBS of flax meal per buddy.. 314 cals, 26 fat, 4 carbs with 3 fiber, 18 protein

2 pounds hamburger meat
1 TBS chili powder
1 TBS parsley
1 tsp garlic powder
3 small eggs
1/2 c flax meal

add salt to this

Mix up in a bowl. put into 6 big muffin tins.. cook at 350 for 30 mins.. drain grease and put back in oven for another 15-20 mins

You can put LC ketchup or tomato sauce over these like regular meatlof too.

Try this by substituting Sausage for the ground beef ~ Yum!



Inverted Shepherd's Pie

8 servings ~ 6.6 net carbs

Ingredients:

1 large head of cauliflower, grated
1 small red onion, diced
5 cloves of garlic, crushed
1 red bell pepper, diced
1 lb lean ground beef
1/2 cup malt vinegar
1/2 cup cottage cheese
6 thin slices of mozzarella
1 jalapeño, thinly sliced
2 Tbsp tomato paste
Curry to taste
salt to taste
Cilantro and herbs to taste
Cayanne pepper to taste

Cook the grated cauliflower with cottage cheese and salt on low heat for 1/2 hour until mashed and soft, blend well. Place at the bottom of a loaf pan. Use a hand mixer to soften it if needed.

Sautée onions and garlic with red pepper and jalapeño, add beef, paste, salt, curry and vinegar. Cook for 15 minutes until thick and juicy. Drain excess liquid, if any.

Add on top of the cauliflower in the loaf pan. Top with slices of mozzarella.

Place in pre-heated oven at 350 F for 20-25 minutes until top is golden brown



Crockpot : low carb taco meatloaf

1 egg
1/2 c sour cream
1/3 c salsa
2-4 TBS taco seasoning
1 c crushed low carb chips (I bake low carb tortillas to crispy)
1/2 c shredded cheddar
2 LB ground beef

toppings : sour cream, salsa, cheddar, lettuce, olives

In bowl, combine first 6 ingredients. crumble beef over mixture and mix well. Pat into bottom of a slow cooker.

Cover and cook on low 8 hours or until meat thermometer reads 160 degrees. put on toppings as desired.

8 servings.

Taco Seasoning : 1 teaspoon chili powder; 3/4 teaspoon paprika; 3/4 teaspoon cumin; 1/2 teaspoon onion powder ;1/2 teaspoon salt; 3/8 teaspoon garlic powder; Pinch cayenne - Makes 4 tsp (to use for regular tacos : combined with a little water, this seasoning will make enough for 1 lb cooked ground beef or 4-6 servings)

NOTE: A package of Taco Bell taco seasoning has 18 carbs and Old el Paso brand has 30 per package , per BATCH this seasoning only has 4 net carbs.



Cheddar Fondue

1/4 cup butter
1/2 cup Carbquik
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground mustard
1/4 tsp worchestershire sauce
1 1/2 cups half and half
2 cups cheddar shredded

in saucepan melt butter; stir in Carbquik, spices, and worchestershire sauce until smooth.
Add half and half gradually. Bring to a boil; cook and stir for 2 minutes or until thickened.
Reduce heat. Add cheese, cook and stire until melted.

transfer to a slow cooker or fondue pot to keep warm



Creamy Chipped Beef Fondue

1.3-1.5 cup half and half
2 pkg 8oz cream cheese cubed
1 pkg 2.5oz thin sliced dried beef, chopped
.25 cups chopped green onion
2 tsp ground mustard

heat half and half and cream cheese in saucepan over medium heat until smooth. stir in other ingredients and heat through.

keep warm in fondue pot or slow cooker.



Reuben Spread

1 jar (16 oz) sauerkraut, rinsed and drained
1 pkg 8oz cream cheese cubed
2 cups (8oz) shredded swiss cheese
1 pkg (3oz) deli corned beef chopped
3 TBS low carb thousand island dressing

combine ingredients in a slow cooker; cover and cook for 2 hours or until the cheese melts.

serve with low carb bread or crackers



Parmesan Fondue

1.5-2 cups half anf half
2 8oz pkg cream cheese
1.5 cups grated parmesan cheese
.5 tsp garlic salt

In large saucepan cook and stir half and half and cream cheese over low heat until melted. Stir in parmesan and garlic; cook and stir until heated through.

Transfer to mini slow cooker or fondues pot to keep warm.



Keep a Week Coleslaw

6 C shredded cabbage
1 med onion thin sliced*
1 med carrot grated*
10 tsp Splenda
1/4 C white vinegar
2 tsp vegetable oil
1 tsp Dijon mustard
1/2 tsp each of salt, celery seed, horseradish
pinch pepper

Mix all ingredients except veggies. Whisk and bring to a boil. Pour hot liquid over veggies and stir. Cover and chill several hours. Next day even better. Stir every once in a while.

1/2c = 25 calories, 1gm fat, 1gm fiber, 4gm carbohydrates

*try replacing the sweet onion in this recipe with a handful of chives or a thinly sliced gree onion. Minus the sweet onion, the original recipe drops to 2 carbs per serving. You can bring those carbs down even further by replacing the carrots with celery.
